FAQ

What are the ingredients? Organic sorghum flour, organic brown rice flour, potato starch, tapioca starch, psyllium husk, organic olive oil, garlic oil, honey, salt.

Does it taste good? Don’t take my word for it. Fans say, “It’s the best gluten-free sourdough I’ve ever had.” “What you have going on with your wheat bread is good, but the gluten-free is special.” 

What do you know about gluten-free baking?  I baked with gluten-free ingredients before gluten-free was a trend. My son (now an adult) is allergic to many things, including gluten, so I have more than two decades of experience making tasty gluten-free food.

Why do you say, “sourdough with gluten free ingredients” instead of “gluten free sourdough?” There are some regulatory issues around labeling food “gluten free.” Although I clean scrupulously before I bake with gluten free ingredients, I don’t have an entirely separate kitchen set up just for gluten-free.

Why are you only selling one day a month? A lot of extra cleaning is involved before I start baking. I double clean my mixer, oven, countertop, tools, bannetons, cooling racks, and more. I use new sponges, freshly washed rags and banneton liners. Switching from wheat to gluten free is a lot of time and work, so I'm doing it just once a month for now.

How did you figure out the price? The ingredient costs for the gluten free ingredients are about 50% higher than a loaf of the wheat sourdough. There is extra work involved, mostly the intense cleaning to avoid cross contamination, so it is more expensive in terms of labor. In comparison, in the freezer at the Berkeley Bowl, a 500g loaf of gluten-free sourdough costs $13.95. This loaf is 560g and my price is $13.00.

How do I store the bread? If you are going to eat it right away, keep it in the paper bag and put that inside a plastic bag. You can keep it for months in the freezer, wrapped tightly in foil. I suggest you buy multiple loaves and freeze them.

Serving suggestions? My son says, slice it thin and toast it or pan-fry.
